Research on the determination of DOBI (Deterioration of Bleachability Index) and carotene levels in CPO at the Medan Oil Palm Research Center (PPKS) has been carried out using UV-Visible Spectrophotometry. Where DOBI is the ratio of absorbance in the visible range and absorbance in the UV range needed to determine the quality of CPO, while carotene is an orange photosynthetic pigment which is important for photosynthesis. To determine DOBI and carotene values, a study was conducted using UV-Visible Spectrophotometry. Based on the results of the research that has been carried out, the DOBI values for CPO obtained for codes A, B, C, D, and E are 3.55, 4.03, 3.77, 3.64, 1.70 where the analysis results do not meet the quality standards according to SNI 2901: 2021. While the carotene values obtained for codes A, B, C, D, and E were 525.81 ppm, 587.89 ppm, 407.70 ppm, 416.90 ppm, and 397.92 ppm where only code samples A and B met the PORAM quality standard, namely 500-700 ppm.en_US
