Sweet potato (Ipomoea batatas L.) is a food crop commodity that can grow and develop
throughout Indonesia. Indonesia has great potential for the development of a sweet
potato-based processing industry. In an effort to increase the added value of agricultural
commodities and also extend the product's shelf life, processing with a sweet potato slicer
can be used as one of the main alternatives. A manual slicing tool for sweet potatoes can
take quite a long time, moreover sweet potato is a fruit that is quite hard so it will cause a
bit of difficulty for workers, therefore it is very good to replace manual tools with semi automatic or automatic tools. With a tool as a sweet potato slicer, it will be able to speed
up and simplify the processing of sweet potatoes. The vertical sweet potato slicer has 3
blades, namely 1mm, 2mm and 3mm. In this study there are 3 parameters to be tested.
Based on the test, it shows that the average value of the tool's effectiveness capacity
is
96.97 kg/hour; 89.28kg hours; 77.22 kg/hour. The average yield value obtained from the
test is 83.83%; 80.47%; and 79.60%. The results of the average total yield loss are 0.089%;
0.062% and 0.062%. The economic analysis of this tool has a fixed cost of Rp. 1,320,000.
