dc.description.abstractCassava processing is a product that is very much found in the market and is a type of snack food in the form of chips. Rotation speed (rpm) is one of the factors that can affect the performance process of the tool. This study aims to test the rotation speed on a horizontal type mechanical cassava slicer to influence the parameters of effective capacity of the tool, yield, and percentage of material left behind. This study used a non-factorial complete randomized design with three speed treatments, namely R1 at a rotational speed of 2600 rpm, R2 with a rotational speed of 2700 rpm, and R3 with a rotational speed of 2800 rpm. The largest effective capacity of the tool is in the R3 treatment of 30.436 kg/hour, the largest percentage of material left behind in the R3 treatment of 2.71 % and the largest yield is in the R1 treatment of 97.44 %. The difference in rotation speed (rpm) on the cassava slicer gives a significantly different effect on the effective capacity of the tool, significantly different on the percentage of material left behind and significantly different on the yield.en_US
