Chicken meat is one of the food products with high nutritional value and is widely favored by the public. However, chicken meat is vulnerable to biological hazards because it contains nutrients that are good for microbial growth. Contamination of chicken meat can occur due to the lack of personal hygiene of the seller and the cleanliness of the sales environment. This study aims to analyze the personal hygiene of sellers, seller behavior, sanitation, and fly density in the sale of chicken meat at Tanjung Morawa Traditional Market. This research is a descriptive research using observational and interview methods. The sample in this study amounted to 41 sellers using the total sampling method. The results showed that the majority of traders were male (80.5%), in the age group of 26-35 years (41.5%), graduated from high school (58.5%), had worked for 1-5 years (48.8%), and most were not suffering from infectious diseases (90.2%). Sellers' personal hygiene was mostly categorized as good (87.8%). Seller behavior was mostly categorized as poor (92.7%). Sanitation of chicken meat sales without live chicken availability was mostly unqualified (90%) and sanitation of chicken meat sales with live chicken availability was mostly qualified (54.5%). From the measurement results, it was found that the average density of flies in sales without live chicken was in the high category and with live chicken was in the medium category. It is recommended to sellers of chicken meat to improve behavior, especially the behavior of littering and cleaning the area of sale and also to improve sanitation, especially in the cleanliness of equipment, provision of trash cans, and cleanliness of sewerage. For the relevant government to improve and complete market sanitation facilities such as disinfecting the market.en_US
