dc.description.abstractThe rapid development in technology has had an impact on every aspect of human lifes. including in the preservation of snakehead fish. to overcome the problem of quality, one of the method that is being persued is drying using a heat pump dryer. the drying process can be done by channeling hot air into he drying room, therefore to the substance itself. some of the advantages of heat pump dryer are, the drying process is unaffected by wheater, doesn create any some or any pollutant.,color and smells of the product are also better than those that is dried in higher temperature. based on the existing problem, in this experiment, tested the drying of snakehead fish. the experiment is conducted by testing the peformance and the decline of water content in the fish. the result of this experiment shows that the heat pump has the coefficientof peformance value of 4. and the decrease of water content in the fish. from 79.6%before the drying to just 4.9% after 7 hour of drying. the result of maas, water content, temperature, humididy re here by shown in graphicsen_US
