The physical characteristics and microstructure of starch from three varieties of orange sweet potatoes are being studied. Orange sweet potatoes are widely cultivated in the community, with some regions including the beta 1, beta 2, antin 2, and antin 3 varieties. Beta 1 and beta 2 sweet potato varieties have orange-colored flesh and exhibit resistance to pest attacks, with purple skin on the outer layer of the tuber. This research was aimed to determine the physical and microstructural characteristics of starch from these three varieties of orange sweet potatoes and to identify the differences in physical and microstructural characteristics among them. The research design used was a non-factorial Randomized Block Design (RBD). The tests conducted were color index (L*, a*, b*, oHue, and chroma), true density, bulk density, tapped density, porosity, flowability, paste clarity (% T), and Scanning Electron Microscope (SEM). The results of the study show that orange sweet potato varieties had a significantly different impact (P < 0.01) on the color index (L*, a*, b*, oHue, and chroma), density (bulk, apparent, and compact), porosity, powder flowability, and paste clarity (%T) of starch.
