Ginger
(Zingiber of ficinale Rosc .) is a multifunctional plant that is widely
processed as a kitchen spice, raw material for making medicine and is often
processed to make food and drinks. In the community, ginger slicing is still done
manually, which makes the ginger slicing time take longer. With the ginger slicing
machine, it is hoped that it will speed up and make ginger pr ocessing easier. The
aim of this research is to test the blade with the parameters for calculating the
effective capacity of the tool, yield, percentage of wasted material and economic
analysis. The ginger slicer has 3 blade distances, namely: 1 mm, 3 mm a nd 5 mm.
Based on the test results, the average effective capacity of the tool was obtained,
namely: 41.32 kg/hour, 24.50 kg/hour and 17.96 kg/hour. The average yields from
the test results are: 86.47%, 85.87% and 81.80%. The average wasted material
from t he test results is: 8.4%, 8.1% and 11.7%. Economic analysis of ginger
slicing found that the basic cost was IDR 1.05 /kg, the BEP (Break Even Point)
was IDR 360,072 kg/year, the NPV (Net Present Value) was IDR
106,952,411.1/year and the IRR (Internal Rate) percentage of Return) 42.71%
which states that the machine is very suitable for commercialization.
