dc.description.abstract | Preparation of kefir combination of goat milk and almond milk using
pineapple fruit tuber extract 5%. The variation used in this study was the ratio of
goat milk: almond milk (v/v) with a ratio of 20:80, 30:70, 40:60, and 50:50. The
combination kefir obtained was tested for protein content using the kjeldahl method
and antioxidant test using the free radical scavenging method with 2,2-diphenyl-1-
picrylhydrazyl (DPPH) reagent. This study aims to validate the effect of probiotic
kefir combination of goat milk and almond milk that has been added with pineapple
stem extract on hyperglycemia in Wistar rats induced by (STZ). Validation was done
by measuring blood sugar levels of blood samples of STZ-induced rats. Pretest -
posttest control group study design was conducted on 7 hyperglycemia-induced male
Wistar rats 60mg/kg bw STZ dissolved in citrate buffer with pH 4.5. Rats were
randomly grouped into three groups, namely: (1) group of animals in STZ as a
positive control, (2) group of animals in STZ and given a combination of kefir 0.09
mL /bb / 21 days, (3) group of animals in STZ and given a combination of kefir 0.018
mL /bb / 21 days. The optimum protein content of kefir was obtained in the variation
of 40:60 which amounted to 1,4412%, and for the antioxidant suppression results in
the variation obtained amounted to 132,7653 ppm. Validation results obtained a dose
of 0.018 mL /bb as the best variation with 3 weeks as the optimum time to reduce
blood sugar levels in STZ-induced rats. | en_US |
