    Abstract
    This study aims to determine the physical quality of broiler meat infected with Salmonella Sp and the provision of binahong leaf flour as a substitute for antibiotics. This research was conducted at the Livestock Biology Lab, University of North Sumatra and the Livestock Production Laboratory, Faculty of Agriculture, University of North Sumatra. The design used was a complete randomised design (CRD) with 5 treatments and 4 replicates. The treatments consisted of P0 (control/no treatment), P1 (No Commercial Antibiotics + Salmonella Sp Infection), P2 (Commercial Antibiotics + Salmonella Sp Infection), P3 (7.5 g Binahong Leaf Powder/kg Ration + Salmonella Sp Infection), P4 (15 g Binahong Leaf Powder/g Ration + Salmonella Sp Infection). The variables observed were pH, water binding capacity and cooking shrinkage. The results of the study can be concluded that the provision of binahong leaf flour as a substitute for antibiotics on the physical quality of broiler meat infected with salmonella sp did not have a significant effect (P>0.05) on meat characteristics, namely meat pH, meat cooking shrinkage, and water binding capacity.
