Design of Controlled Atmosphere Storage (CAS) for Horticultural Products
Abstract
The disadvantage of horticultural commodities is that the shelf life of fresh is short or easily damaged, so its availability is limited to meet the needs of the community. Chili is a type of horticulture that has a relatively low shelf life. One technology that allows for storage for a long time is to control the metabolic pattern of horticultural commodities to keep running normally and under control as it should. Technology that leads to metabolic control but still runs normally that can be used through methods of controlling oxygen (O2), carbon dioxide (O2), temperature, and humidity (RH). CAS (Controlled Atmosphere Storage) is a technology that aims to control the concentration of O2 CO2 gas, temperature and humidity in the storage room. The purpose of this study is to design controlled atmosphere storage (CAS) for horticultural products. The research method was carried out by making 3 storage treatments, namely CAS machines, refrigerators and open spaces for 30 days. In the CAS machine treatment, the concentration of the stockpiling chamber is set to O2 5%-7%, temperature 10o C-15o C, humidity 85%-90% and CO2 3%-5% so that chili can last for 30 days with weight loss conditions -0.031, moisture content 85% and hardness at the base 0.58 N/mm2, middle 0.49 N/mm2 and tip 0.58 N/mm2.
