This study aimed to achieve optimal production levels when handling Salak dates by minimizing total inventory costs. Inventory is one of the issues related to production process activities, costs and distribution of goods, whether raw materials, work in process or semi-finished or finished goods. Too much inventory or too much shortage can lead to losses as the company loses the opportunity to earn the profits the company should have earned. Therefore, inventory control includes all measures taken to ensure the availability of a specific quantity of stock. This study uses the EPQ model to determine the production level of salad dates with minimum total inventory cost. According to the calculations using stock control theory in this study, the optimal production level of salad dates per production cycle is 3322 boxes and the optimal time interval is 6.64 months. Based on the company's production conditions, the difference in procurement cost for Salak dates produced under EPQ mode is IDR 175,557,659.en_US
