dc.description.abstractBackground: Borax is a harmful preservative that is not permitted to be used in food ingredients. Borax is used as an antiseptic. One of the problems that often occurs is the rise of food that does not comply with safety and health standards. And it turns out that currently there is a trend issue that borax is often added to crackers. However, the use of borax in food products has been banned by the government due to its side effects on health. Objective: This study aims to qualitatively evaluate borax in cracker samples sold in Padang Bulan Medan. Method: Qualitative analysis of borax content in crackers was carried out by 3 test methods: flame test, color test using turmeric paper and precipitation test using AgNO3. Results: From the results of the qualitative analysis of borax content in crackers, it was found that 6 samples tested with 3 repetitions each did not contain borax. Conclusion: The cracker samples met the requirements of food additives stipulated in Permenkes RI No. 1168/Menkes/Per/X/1999 regarding borax requirements.en_US
