Silage is an appropriate technology that is applied in the framework of forage storage for a long time by accelerating the fermentation process under anaerobic conditions thereby suppressing the growth of spoilage microbes.. This research was conducted at the Technology Research Laboratory, Faculty of Agriculture and Animal Production Laboratory, Faculty of Agriculture, Universitas Sumatra Utara. Using 20 kilos of elephant grass which is fermented for 3 weeks. The design used was a completely randomized design (CRD) with 4 treatments and 5 replications. Treatment with various doses of pineapple skin moles consisted of P0 : control; P1: 0.25 %; P2: 0.50 % ,and P3: 0.75 %. The parameters studied were the pH of the silage, the amount of mold present, aroma, texture, color. The results of the study showed that the provision of local pineapple microorganisms improved the quality of elephant grass silage as indicated by a lower silage pH with an average of 4.7, the presence of little mold and good organoleptic quality. The best dose for adding MOL in making elephant grass silage was 0.50%en_US
