Pemanfaatan Batang Pisang Kepok Fermentasi Menggunakan Ekoenzim terhadap Kualitas Daging Domba Lokal Jantan

Abstract

Providing fermented kepok banana stem waste with ecoenzymes as feed for local male sheep was carried out at the Alfino Farm farm on Jalan Tunas Mekar, Tuntungan II Village. Pancur Batu District, Deli Serdang Regency, North Sumatra. The research was carried out experimentally using a completely randomized design (CRD) with 4 treatments and 5 replications. The treatments are P0 = 80% Field Grass + 20% Concentrate, P1 = 70% Field Grass + 10% Fermented Banana Stems + 20% Concentrate, P2 = 60% Field Grass + 20% Fermented Banana Stems + 20% Concentrate, P3 = 50% Field Grass + 30% Fermented Banana Stem + 20% Concentrate. The parameters observed were water content, fat content, protein content, water holding capacity, cooking loss, and meat pH. The results of the research showed that giving fermented kepok banana stem waste with ecoenzymes as feed for local male sheep showed no significant effect on the quality of local male sheep.
