The scarcity of animal protein from the fisheries industry need to be addressed, because animal protein sources from fish are important in the feedstuffs industry. Deli Serdang Regency is part of the east coast of North Sumatra Province with an area of 2,497.72 km2, has a fish production of around 32,294 tons/year. Some types of fish that are processed into fisheries products are gulamah (Johnius belangerii) and kasai minyak (Thryssa hamiltonii). The waste generated from these processed fisheries products is the head and offal.
This study used gulamah fish (Johnius belangerii) and kasai minyak fish (Thryssa hamiltonii) as much as 5 kg/type. In this study, the percentage rendement of Johnius belangerii fish head was 36.83%, Thryssa hamiltonii fish head was 38.64% and Thryssa hamiltonii fish offal was 18.76%. The proximate test results of 250 grams of Johnius belangerii fish heads produced 33.4% protein and Thryssa hamiltonii fish heads produced 42.4% protein and Thryssa hamiltonii fish offal produced 15.3% protein. Based on layer protein requirement of minimum 16%, 2.619,4 kg of protein from Johnius belangerii fish head, 3.385,8 kg of protein Thryssa hamiltonii fish head 593,2 kg of protein from Thryssa hamiltonii offal were produced one year. Fisheries waste can providing protein for 9.414 layers. It can be concluded that Deli Serdang Regency has potential in providing fisheries waste feedstuffs.
