Bakau Minyak (Rhizophora apiculata) is a species of the Rhizophoraceae
family which is one of the most important species in the mangrove forest
ecosystem. This study aims to analyze the content of chemical compounds in
bakau minyak leaves (R. apiculata), analyze the tannin content in bakau minyak
leaves (R. apiculata), analyze the antioxidant activity of bakau minyak leaves
(R. apiculata), determine the level of public preference for bakau minyak tea
(R. apiculata). Testing for chemical compounds in bakau minyak leaves was
carried out using the phytochemical screening method which included examining
the class of alkaloids, flavonoids, triterpenoids, tannins, saponins, steroids and
glycosides. Determination of tannin content was carried out using the Lowenthal-
Procter method. Determination of antioxidant activity was carried out using the
2,2-diphenyl-1-picrylhdrazyl (DPPH) using UV-Visible Spectrophotometry.
Consumer preference level was tested by hedonic test based on color, aroma and
taste parameters. The results of the phytochemical screening test for the ethanol
extract of bakau minyak R. apiculata positively contain saponins, tannins,
flavonoids, triterpenoids, glycosides and negatively contain alkaloids and steroids
and the hot water extract of bakau minyak R. apiculata positively contains
saponins, tannins, flavonoids, triterpenoids, glycosides, steroids and negatively
contain alkaloids. Results of testing the analysis of tannin content in bakau
minyak R. apiculata using a UV-visible spectrophotometerobtained with a value
of 126.94 mg GAE/g. The results of test antioxidant activity using DPPH showed
that the ethanol extract of bakau minyak leaves R. apiculata had antioxidant
activity that was classified as very strong with a value of 6,990 ppm and the hot
water extract of bakau minyak leaves R. apiculata had antioxidant activity that
was classified as strong with a value of 58,139 ppm. Based on the hedonic test
results of bakau minyak tea R. apiculata with color, aroma and taste parameters,
bakau minyak tea was in adequate level.
