Streptococcus mutans is a dominant bacterium found at the beginning of plaque
formation until the formation of dental caries. Caries if not treated properly can lead
to odontogenic infections. Caries prevention can be done by using antimicrobial agents.
Antimicrobial materials from nature are currently widely used due to the decreasing
effectiveness of chemical drugs due to side effects and resistance. Plants that have the
potential to be used are jackfruit plants. On the skin of the jackfruit there is a sap/latex
that is used by the community as a cure for abscesses. Jackfruit peel extract is known
to contain antimicrobial active compounds, namely flavonoids, tannins and saponins.
The purpose of this study was to determine the Minimum Inhibitory Concentration and
Minimum Bactericidal Concentration of jackfruit peel extract on the growth of
Streptococcus mutans. This type of research is a laboratory experiment with a post test
only control group design. The concentration of jackfruit peel extract tested was
3,125% 6,25% ,12,5% 25%, and 50% with positive control (aloe vera mouthwash
formula), and negative control (DMSO) four repetitions. Antibacterial effectiveness
test using Kirby-baurer disc diffusion and agar dilution method. The results of data
analysis using ANOVA showed a p-value of 0.00 on inhibition, which means jackfruit
peel extract can inhibit the growth of Streptococcus mutans but Minimum Inhibitory
Concentration and Minimum Bactericidal Concentration were not found. The
conclusion of the study is that jackfruit peel extract can inhibit the growth of
Streptococcus mutans bacteria but is not able to kill these bacterium.
