dc.description.abstract | Young coconut ice is a drink that is quite most popular with in public, besides its fresh taste, this drink also contains more electrolytes than plain water so it is good for health. In addition, artificial sweeteners such as saccharin have a negative impact on health when consumed excessively and traders have not paid attention to sanitary hygiene in the processing of young coconut ice. The purpose of this study was to analyze saccharin content and sanitary hygiene in coconut ice drinks in East Binjai District. This type of research is a survey, descriptive in nature to determine the saccharin content, and sanitary hygiene in coconut ice drinks. The population of all traders who sell coconut ice around the East Binjai District area totaling 13 traders. The sample amounted to 13 traders because this study used total sampling technique. The results showed that 13 samples of coconut ice that had been examined, it was found that 100% did not contain saccharin. The results showed that coconut ice consumers were dominated by ages 31-40 years (43.3%), and the majority were students (40.0%), with a frequency of consuming coconut ice 1-2 times / week (80.0%), and of the 30 consumers the majority did not experience health complaints while consuming coconut ice in East Binjai District (83.3%). It is recommended for coconut ice traders to pay more attention to personal hygiene, sanitation of processing sanitation equipment and sanitation of the place.
