dc.description.abstract | Food safety is one indicator in improving the level of public health. Food is an important need in human life. Society often add food accompaniments when eating, such as crackers. There are many types and producers of raw cxrackers scattered in Tebing Tinggi nTown whose source of raw materials or additional materials are used during the cracker processing process. Food can cause health problems if it contain dangerous food additives. The most commonly used dangerous food additive and prohibited by the government is borax. There are many types of raw crackers scattered in Tebing Tinggi Town and they come from many producers whose source of raw materials or additional materials are used during the cracker processing process. This research aims to analyze the borax content in raw crackers as well as the knowledge, attitude, traders’ action. This type of research is descriptive. The sample consisted of 19 traders using a total sampling method. The object of this research are 12 samples of crackers using a purposive sampling method. The result of the research showed that there 12 cracker samples so that they met the requirements in accordance. The majority of traders’ knowledge regarding the existence of borax in raw crackers are in the medium category (42,1%), attitude are in good category (57,9%), and action are in the poor category (100%). It is hoped that the relevant agencies will provide education to raw crackers traders regarding food additives and those related to BPOM distribution permits so that they can increase the knowledge, attitude, and action of traders’ so they can anticipate and maintain the quality and safety of the products sold. It is hoped that raw crackers producers will remain consistent in not using borax or food additives probihited by the government during the processing process. | en_US |
