Abstract
Food management in hospital nutrition installations requires special handling to avoid contamination, namely by paying attention to the food safety system. Food safety cannot be separated from the role of food handlers. So it is necessary to implement a GMP system so that food management meets the specified requirements to produce quality food products. The aim of this research is to analyze the implementation of GMP in Hospital Nutrition Installations. This research is a survey. The GMP variables studied are the environment, buildings, sanitation facilities, food ingredients, storage, food processing, food handlers, and supervision of food and drink hygiene and sanitation. Data collection was carried out by observation and interviews. The research results show that overall the variables studied are to fulfil with Kepmenkes No. 1204 of 2004. However, there are several things that must be considered, such as the environment, doors, floor in the kitchen, and its use APD complete and supervision of food handlers. It is recommended to carry out health checks on food handlers at least twice a year and impose sanctions or fines related to food handlers' non-compliance in using APD completely while working.
