Analysis of Artificial Colourings and Sweeteners on Candied Fruits and Manufacturers Behavior in Medan 2024
Abstract
Candied fruit manufacturers usually add artificial colourings and sweeteners on
fruits for more attractive appearance and sweeter taste. This study was done to
analyse the colourings used, especially Rhodamine B, Metanil Yellow, and
cyclamates, and the behaviour of candied fruit manufacturers. A descriptive survey
with cross-sectional approach was used in this study. Data were obtained from
candied fruit samples assessed in laboratory and interview with 10 candied fruit
manufacturers in Medan. It was found that all samples contained permitted
colouring such as Amaranth, Yellow FRS, and Red 10B, and no prohibited artificial
colourings were observed. All samples contained cyclamates where 30% met the
criteria below the threshold values while 70% did not and were above the threshold
values. It was found from the interview that most candied fruit manufacturers had
sufficient knowledge (60%) on artificial colourings and sweeteners. The behaviour
of all manufacturers was good (100%), and the action was mostly found as
adequate (80%). In conclusion, all candied fruits did not contain non-permitted
colourings Rhodamine B and Metanil Yellow but contain cyclamates.
Manufacturers were recommended to use natural sweeteners such as sugars and to
notice the regulations on the use of artificial colourings and sweeteners so that the
knowledge and action of all manufacturers can improve to the good category, and
for the public to consume less candied fruits
