dc.description.abstract | Fresh vegetables are usually consumed raw with the ayam penyet (smashed fried chicken) meal, popular due to its ease of acquirement and affordable price. Fresh vegetables are at risk of exposure to Escherichia coli originating from water used in washing or when processing the vegetables is poorly managed. This type of research uses a descriptive quantitative method with a cross-sectional research design to view hygiene and sanitation. Additionally, laboratory examinations are performed to detect Escherichia coli content in fresh vegetables and clean water used in the ayam penyet eateries in Medan Johor sub-district. The population of this research 10 ayam penyet sellers that provide fresh vegetables in the form of lettuces and cabbages. The samples were obtained by using the purposive sampling technique with criteria of 5 ayam penyet eatery owners who own permanent buildings and 5 ayam penyet eatery owners who do not. The data collection method used observation sheets, questionnaires, and laboratory examinations. The result depicts that the view of hygiene and sanitation of all the sellers is underqualifying the health requirements (100%). Examining Escherichia coli in 7 samples (70%) of fresh vegetables had a consistency beyond the maximum limit and inspection of Escherichia coli in clean water used in the eateries, resulted in 3 samples (30%) containing. Escherichia coli. A total of 7 sellers (70%) have a good level of knowledge whereas, regarding behavior, all sellers (100%) are categorized with good behaviors.
