Analisis Kandungan Kadmium dalam Kerang Rebus yang Dijual di Kota Medan Tahun 2023

Abstract

Shellfish can be dangerous because they contain the heavy metal cadmium due to environmental pollution. The aim of this research is to analyze the cadmium content in boiled shellfish sold in the city of Medan and determine the safe limit for cadmium that can be consumed. This type of research is descriptive research using the ARKL Table method and using an examination with a Thermo Scientific Inductively Coupled Plasma instrument. The number of samples was 7 samples of virgin clams and 8 samples of feather clams which were sold by boiled clam traders spread across 7 sub-districts in Medan City. The results of the research show that 60% of boiled clam traders are male, 40% of traders are in the age range of 31-40 years, 60% of traders have at least junior high school education, 40% of traders have been selling for >20 years, and 60% of traders have been selling for >20 years. % of traders take shellfish in the TPI Belawan area. The highest concentration of cadmium content in the feather clam is 0.037997 mg/kg, while the lowest concentration of cadmium content is 0.000646 mg/kg and the highest concentration of cadmium content in the feather clam is 0.095578 mg/kg, while the concentration of cadmium content the lowest was 0.000371 mg/kg, where the concentration was still below the quality standard. Furthermore, the results obtained from the risk level assumption (RQ) for children and adults at 5 years, 10 years and 15 years for virgin cockles and feather clams were <1 or did not exceed the quality standard limit. Advice that can be given to traders to reduce heavy metal levels in food is to boil it for at least 45 minutes with a mixture of salt, vinegar and lime solution
