    Abstract
    Research has been carried out on Free Fatty Acid (ALB) analysis and Water Content Analysis of CPO (Crude Palm Oil), at the PKS PT Multimas Nabati Asahan (Wilmar Group). This research aims to determine the free fatty acid content and moisture in Crude Palm Oil (CPO) and to determine the compliance with palm oil standards that have been set by SNI at the Pt Multimas Nabati Asahan Palm Oil Mill (Wilmar Group). Research on Free Fatty Acid (ALB) analysis was carried out using the alkalimetric titration method and moisture using the gravimetric method. The alkalimetric titration method is carried out by weighing the sample followed by adding alcohol and PP indicator, then titrating with NaOH until a purplish color is visible on the CPO. The gravimetric method is carried out by weighing the sample and placing it in an oven, then cooling it in a desiccator, weighing it again to determine the moisture. From the results of the research carried out, the Free Fatty Acid (ALB) value in CPO (Crude Palm Oil) was obtained with the results on day 1 being = 3.25%, day 2 being = 3.19%, day 3 being = 3, 30%. Meanwhile, the moisture in CPO (Crude Palm Oil), with the results on day 1 being = 0.16%, day 2 being = 0.18%, day 3 being = 0.18%. The analysis results show that CPO (Crude Palm Oil) meets standards OF SNI. Apart from that, the level of Free Fatty Acids (ALB) and moisture in CPO (Crude Palm Oil) products are influenced by the processing process and the quality of the fruit processed.
