    Abstract
    Crude Palm Oil (CPO) product is an oil that was processed from the extraction of palm fruit. Free fatty acid content and water content are quality standards for CPO. The increase in free fatty acid levels and water content in CPO is caused by several influencing factors, including hydrolysis reactions in the oil, damaged fruit, inappropriate heating temperatures and storage time. This research aims to determine the relationship between storage time and free fatty acid levels and water content. The test was carried out for 3 days and once every 1 day the CPO was analyzed for free fatty acid levels and water content. The free fatty acid content value is determined using the acid-base titration method, while the water content value is determined using a moisture analyzer. The analysis results obtained for free fatty acid levels experienced an increase of ± 0.11% and an increase in water content of ± 0.14%, meaning that the longer the storage time, the higher the free fatty acid content and water content. From the results of the experiments that have been carried out, it still meets the specified SNI, namely a maximum free fatty acid of 5% and a maximum water content of 0.5%. It is hoped that the factory will improve its performance in monitoring CPO storage and check the tank's suitability periodically to maintain quality in accordance with established quality standards.
