dc.description.abstract | Background: Coffee is one of the most popular drinks in the community, besides having a distinctive smell and taste, coffee also contains high levels of caffeine. Caffeine is an alkaloid compound of the methylxanthine group. Caffeine in appropriate levels can have a positive effect with the requirements of caffeine levels in ground coffee according to SNI 01-3542-2004 which is 0.45-2 %.
Objective: This study aims to determine the caffeine content in coffee products in Medan using the Ultraviolet (UV) spectrophotometric method.
Methods: The samples used were Nescafe Classic® (K1), Tanpak Sidikalang® (K2), Excelso Robusta Gold® (K3), Kapal Api® (K4), and Top Coffee Toraja® (K5). This research is a descriptive research which is a method to determine the caffeine content in coffee products with various brands. Caffeine levels were obtained using the ultraviolet (UV) Spectrophotometric method.
Results: The results showed that all five brands of coffee products were positive for caffeine. The maximum wavelength is 273.2 nm, the regression equation for the determination of levels is Y = 0.0447 X + 0.0104, so that the obtained caffeine levels in coffee products range from 0.48-1.09 %. From the validation of the method, the accuracy was 93.05-103.89 %, and precision 1.43-9.49 %.
Conclusion: Based on the results of the study, it can be concluded that the caffeine content of each coffee product sample varies, which ranges 0.45-2 % and meets the requirements of the SNI caffeine content that has been determined. | en_US |
