Abstract
Star fruit is a type of tropical fruit that has the prospect of being processed into profitable horticultural products. Compounds contained in star fruit such as flavonoids and phenols function as anti-bacterial compounds. Fruit juice drinks show quite high growth compared to other categories.
The pre-designed factory for making juice from star fruit (Averrhoa Carambola L.) is designed with a production capacity of 15,523 tons/year and operates 330 days a year. The factory location is planned to be in Pekalongan Regency, Central Java. The aim of designing a juice manufacturing plant is to apply chemical engineering knowledge which includes mass balance, energy balance, equipment specifications, chemical engineering operations, utilities and other parts of chemical engineering, as well as to meet the need for environmentally friendly alternative fuels.
