    Abstract
    Calcium lactate (C6H10CaO6) ia an organic salt derrived from lactic acid. Calcium lactate is a GRAS (Generally Recognized As Save) compound so that calcium lactate has wide applications in industry, health and food. The raw material used in this pre-factory design is breadfruit. The process starts with the raw material preparation stage. At this stage the breadfruit will be cleaned and then shredded. The second stage is the hydrolysis process where the breadfruit will be hydrolyzed with the help of catalyst HCl in the hydrolysis reactor to produce glucose. The hydrolysis reaction condition is at 30°C with 1 atm. The third stage is the separation process to separate glucose from breadfruit that is not hydrolyzed using a centrifuge. The fourth stage is the neutralization process where the HCl content in glucose will be neutralized using NaOH to produce NaCl. Then NaCl will be separated from glucose using Reverse Osmosis Membrane. The fifth stage is the bacterial breeding process where 10% glucose will be used to breed Lactobacillus delbruckii bacteria in the Culture Tank. The breeding process lasts for 9.31 hours with a temperature of 45°C. The sixth stage is the glucose fermentation process to produce calcium lactate in the Fermentation Reactor using Lactobacillus delbrueckii bacteria for 9.31 hours at 45°C and 1 atm pressure. The seventh stage is the sterilization process where the calcium lactate will be sterilized by heating the calcium lactate to 82°C to kill the bacteria. After neutralized, the calcium lactate is flowed to Decanter to separate the water-insoluble components from the calcium lactate. Then the water content in calcium lactate will be removed using an Evaporator. After the calcium lactate becomes powder, the calcium lactate product is stored in the production warehouse The preliminary plant design of calcium lactate production plant from breadfruit using fermentation process has a capacity of 3,200 tons/year and operates for 330 days a year. The plant is planned to be established in Tugu District, Semarang City, Central Java Province with a plant area of 13,900 m2. The water requirement for this plant is supplied from Beringin River as much as 13,140.199 kg/hour. The planned form of business entity is a Limited Liability Company (PT) with a total workforce of 120 people. The results of the economic analysis of this calcium lactate manufacturing plant from breadfruit are as follows: - Total Investment Capita : Rp 361,098,170,592,- - Total Production Cost : Rp 115,351,363,803,- - Sales Proceeds : Rp 230,397,785,088,- - Net Profit : Rp 79,782,169,950,- - Profit Margin (PM) : 49,43% - Break Even Point (BEP) : 47,41 % - Return on Investment (ROI) : 22,09 % - Pay Out Time (POT) : 4.53 Years - Return on Network (RON) : 36,82 % - Internal Rate of Return (IRR) : 22,95 % From the results of the economic aspect analysis, it can be concluded that the calcium lactate manufacturing plant from breadfruit is feasible to establish
