In an effort to reduce the levels of fat and cholesterol in chicken meat, this study investigates the influence of adding chitosan derived from the waste of Black Soldier Fly (Hermetia illucens) pupa shells to chicken feed. Chitosan is known to possess bioactive properties that have the potential to affect fat metabolism in livestock. This research employed an experimental approach with a completely randomized design (CRD) involving 4 (four) treatments and 5 (five) repetitions. Chicken meat produced from four treatments was then analyzed to determine their fat and cholesterol levels. The findings of the study indicate that the addition of chitosan from Black Soldier Fly pupa shell waste as much as 0.02% and 0.03% to chicken feed significantly reduces the levels of fat and cholesterol in chicken meat compared to the control group and addition of 0.01% chitosan. These findings have significant implications in efforts to enhance the nutritional quality of chicken meat, thereby positively impacting human health. Furthermore, this research also supports the concept of sustainable agricultural waste management by transforming Black Soldier Fly pupa shell waste into a beneficial ingredient in the livestock feed industry.en_US
