Characteristic Analysis of Liquid Smoke from Pyrolysis of Coconut Shell Biomass by Distillation Method
Abstract
Coconut shell is one type of biomass from agricultural waste that can be utilized into
liquid smoke, because coconut shell contains 26.5% cellulose, 27.7% hemicellulose
and 29.4% lignin. Liquid smoke can be utilized as an antioxidant and food
preservative. This study aims to determine the characteristics of liquid smoke after
purification using distillation and filtration using active zeolite and activated carbon.
The method used in this research is distillation with temperature variations of 100,
110, 120OC. Based on the results of the study, it is known that the characteristics of
liquid smoke at a temperature of 100OC are pH 2.6; phenol content 10.96%; acid
content 37.74%; specific gravity 1.011 gr/mL; clear yellowish color; and light smoke
odor (not pungent), at a temperature of 110OC is pH 2.3; Phenol content 12.52%; Acid
content 41.54%; Specific gravity 1.010 gr/mL; Yellow-brown color; and Moderate
smoke odor (Slightly Pungent), at a temperature of 120OC pH 2.0; Phenol content
14.89%; Acid content 43.99%; Specific gravity 1.017 gr/mL; Yellow color; and
Moderate smoke odor (Pungent). The quality of liquid smoke produced is close to the
SNI 8985: 2021 standard which is the quality standard for liquid smoke.
