Taro tuber, Latinly known as Colocasia esculenta L, is a common root crop
found all over the world. Complex carbohydrates, dietary fiber, and a number of
essential minerals and vitamins can all be found in taro tubers. Post-harvest
processing of taro tubers can be done by grating them, so that the results of the
grating process can be made into various delicious and high-value processed food
ingredients. The purpose of this research is to test the effect of various pulley
diameters to get the best diameter in obtaining the maximum taro tuber grated
results on a cylindrical type grater. With the change of pulley, it is expected to
increase efficiency and productivity in the process of grating taro tubers. This study
used a non-factorial complete randomized design. The pulley diameters used were
2 inches (P1), 4 inches (P2) and 6 inches (P3). In this study, the best pulley in
treatment 3 pulley is 6 inches. The results of this study indicate that the largest
effective tool capacity (172.47 kg/hour) in (P3) with a pulley size of 6 inches, the
largest yield (89.97%) in (P3) with a pulley size of 6 inches and the largest
percentage of material lost (23.73%) in (P1) with a pulley size of 2 inches.
