Risk Mitigation in Donita Food SMES to Increase Supply Chain Resilience
Abstract
UKM Donita Food is a business in the food sales sector that focuses on selling
frozen food. Identification of various risks in the supply chain is necessary to
evaluate the level of supply chain resilience of the company. The results of
measuring the level of resilience can be the basis for companies in mitigating risks
in the supply chain. The company's problem is the decline in the production rate of
donuts due to restrictions during the pandemic and the soaring price of raw
materials due to the increase in flour prices due to the impact of Russia's war with
Ukraine. After the pandemic was over, a new problem emerged, namely a decrease
in sales levels due to high competition. The purpose of this study is to evaluate and
provide risk mitigation strategies using the House of Risk method to determine the
level of resilience of the company's supply chain. This study produced 19 risk events
and 17 risk agents in the supply chain activities of Donita Food SME donut
production. House of Risk Phase II produces several risk mitigation strategies,
there are 8 risk mitigation strategies. The resilience zone framework is used to map
the causes of risk based on capability and vulnerability. There were 4 main risk
causes that were in the resilience zone, 1 risk cause was in the wasteful zone, and 1
risk cause was in the risk exposure zone.
