dc.description.abstractPotatoes are one of the foods that can be processed into various types of food preparations. Many slicing tools, especially potato slicers, use electric motors as the main driving force. Problems often occur when processing potatoes using an electric motor, especially during power outages. The method used in this research is experimental method. Modifications to this tool are the addition of 2 pulleys with a size of 1 inches on the blade shaft and 10 inches on the manual lever turning shaft, adding a manual turning lever which is placed beside the tool with a lever height of 50 cm from the pulley, a radius of 25 cm and a long lever holder. 15cm. The results of the study obtained the blade shaft rpm of 774 using a manual player as the driving force. The use of manual turning power to rotate the tool is 10 w or the equivalent of 0.014 HP with a torque of 0,4 kg.m Nm. The average tool capacity using a manual player is 108 kg/hour with an average tool yield of 89%.en_US
