This research was aimed to determine the effect of the addition of moringa leaf extract and CMC and the interaction of both on the quality of pineapple stem syrup. This research used the Factorial Completely Randomized Design method with two factors, namely the addition of moringa leaf extract (K): (0%, 3%, 6%, and 9%) and carboxymethyl cellulose (CMC): (0.1%, 0.2%, and 0.3%). The parameters analyzed were antioxidant activity, vitamin C content, total soluble solids, pH, viscosity, color, hedonic organoleptik namely color, viscosity, aroma, taste, and general acceptance.
The results of the research showed that the addition of moringa leaf extract had a highly significant effect (P<0.01) on the parameters of antioxidant activity, vitamin C content, total dissolved solids, pH, viscosity, color, hedonic taste,hedonic color and hedonic general acceptance. Meanwhile, the addition of CMC had a highly significant effect (P<0.01) on the parameters of total dissolved solids, pH, viscosity, color, viscosity hedonic, and hedonic general acceptance. The interaction between the addition of moringa leaf extract and CMC had a highly significant effect (P<0.01) on the parameters of total dissolved solids, pH, and viscosity.
